Apple & Sweet Potato Bake

I created this recipe because I was in need of healthy snacks to send off to school with Hattie…that didn’t contain nuts. We eat this as a breakfast, dessert, or layered with yogurt for a parfait-style snack. It’s ridiculously easy to make and it’s pretty darn tasty. Enjoy!

INGREDIENTS

3 apples, chopped 

1 sweet potato, peeled and chopped

1 tsp cinnamon 

1 cup shredded unsweetened coconut

2 Tablespoons coconut oil

3 medjool dates, pitted

1 tsp vanilla

INGREDIENTS

Toss together first 3 ingredients in a 9x9 glass baking dish. 

Place remaining ingredients in the bowl of a food processor; pulse until crumbly. Transfer mixture on top of the apple/sweet potatoes. Cover and baked for one hour at 375.

Serve as-is, or layer with grass fed yogurt in a small mason jar for a yummy parfait!
