Cucumber Salmon Bites

These cucumber bites are so flavorful and come together in less than fifteen minutes! They’re the perfect colorful and nutrient-dense addition to your game day spread. 

This recipe is rich in fiber, naturally gluten free, and the salmon provides some healthy omega-3 fatty acids to combat inflammation in the body.

INGREDIENTS

  • 1 hothouse cucumber cut into 1/4” slices 

  • 1 large avocado 

  • The juice of half a lemon

  • 1/2 tsp salt, more to taste 

  • 4-5 oz smoked salmon 

INSTRUCTIONS

Start by mashing your avocado and combining well with the salt and lemon juice. 

Slice your cucumbers and spread the avocado mash over them. Tear the smoked salmon into bite-sized pieces and top the cucumbers with the fish! 

Serve immediately and enjoy!
