Grain-Free Apple Crisp

I made this grain-free apple crisp two days in a row because my husband and kid ate the first batch while I was at yoga. Savages. Second time around I wrote down the recipe so I could share with you. Luuuuckkkkyyy. If you've recently visited an apple orchard with your family to post fall images all over social media, cheers. Now you're swimming in apples. Here's what to do with them.

APPLE CRISP INGREDIENTS

6 medium apples

2 teaspoons pumpkin pie spice mix (you could use cinnamon instead)

1/4 teaspoon organic lemon zest

3/4 cup raw almonds

3 Tablespoons coconut oil or grass fed ghee*

1/2 cup coconut flour

1 Tablespoon real maple syrup (local if you got it)

*I've used either, and they both work great. You could even combine the two. If you're using ghee, SERIOUSLY consider this Madagascar vanilla bean one—it's lights out.

INSTRUCTIONS

Chop the apples and put them in 8x8 glass baking dish. Sprinkle with spice mix and lemon zest and toss with your hands so all the apple chunks are covered.

Pull out your food processor.

Toss in the almonds and pulse until they look like the photo.

Add coconut oil or ghee, then process until combined. Add coconut flour and process. Finally, add maple syrup. Pulse until crumbly.

Sprinkle over the top of the apples. Cover baking dish with aluminum foil, bakes at 375 for 45 minutes. Apples should be soft at this point. If they're not, bake a little longer covered.

Once apples are soft, remove the foil, then turn oven up to 400. Bake for 15 more minutes, until top is browned.

A few notes:

If you're impatient like me and just want to toss all ingredients in the food processor at once, okay. But you may be disappointed with the final texture. If you follow my outline above, you'll end up with the perfect crumble. It's up to you.

If you don't have a food processor, you could potentially use almond flour in place of the almonds, then stir everything together by hand. You'd have to melt the coconut oil first. I can't promise anything, but it's worth a try.
