Grain-Free Chocolate Chunk Blondie Bread
Just so you know, creating a recipe title is hands down the hardest part of writing a recipe. I don't even know what's happening here. It's a type of bread. But it's not banana bread or zucchini bread or pumpkin bread. It's good. And there's a whole can of beans in there, so that's pretty tricky, no?
If you like this type of recipe, check out my Chocolate Chunk Brownie Recipe that I wrote a zillion years ago.
BLONDIE BREAD INGREDIENTS
1 can Eden Organics chickpeas
1/2 cup cashew butter (you can use any type of nut butter)
1 pastured egg
1/2 cup coconut sugar
1 tsp vanilla
1/2 tsp baking soda
pinch sea salt
1/3 cup chocolate chunks (cut up a dark chocolate bar - or use chocolate chips)
INSTRUCTIONS
Blend first 7 ingredients in a food processor until smooth. Then add chocolate chunks and pulse until fully incorporated.
Spread into a 8x8 glass baking dish. Bake at 350 for 25 minutes, or until inserted toothpick comes out clean.
Cool, then cut into pieces.
