Paleo Pancakes
I posted these high protein, sugar free pancakes to my Instagram stories this morning and was asked several times over for the recipe.
Lucky for you, we’re having a lazy Sunday morning since Hattie is fighting off a bug.

So I had the time to make a new batch, write out the recipe and post it here.
INGREDIENTS
Makes 4 pancakes
3 eggs
2 Tablespoons grass-fed ghee, melted
¼ cup almond flour
¼ cup coconut flour
2 scoops collagen peptides - I use this brand (use code FUNK for 20% off)
1 teaspoon baking powder
1 teaspoon apple cider vinegar
INSTRUCTIONS
Whisk eggs in a medium bowl, then stir in melted ghee. Add flours and collagen. Lastly, add baking powder and ACV at the same time. You’ll notice it bubbles. That’s good! It makes the pancakes fluffy. Stir it all in.
Drop onto a hot cast iron skillet greased up with ghee or coconut oil. Cook for 2-3 minutes, then flip and cook an additional 2-3 minutes. (Cook time depends on how hot your pan is—keep your eye out so they don’t burn!)
I love to cook down frozen blueberries in a small pan and top the pancakes with them.
You can also go the classic route and top with local syrup and grass-fed ghee.
SUBSTITUTION QUESTIONS
I’m sure I will be asked, “can I make these without collagen?” and my answer is...probably. You might have to increase some of the flour, though, to get the same fluffy texture and consistency.
As far as other substitution questions go...
My answer is this: I dunno. Test it out and see what you come up with. I am no baker, my friends. Just a try-and-see-er. The recipes that come out exceptionally well make it to my blog when all the stars align and I have the desire, motivation and time to actually write up the recipe, re-create it, take photos, and write a blog post. Please keep in mind, I am a nutritionist, *not* a food blogger.
