Savory Turkey Sausage
If you're into batch cooking, these are a great thing to make up in the beginning of the week. You can make in bulk and even freeze some. Serve with roasted veggies for a savory egg-free breakfast, or top a large lunch salad with a few.
I usually make these Sunday morning, after my husband has cooked up some bacon. He bakes bacon in the oven on a baking sheet lined with parchment paper. I use the leftover grease to cook the sausages in. Turkey can be really dry and bland, so I like the flavor that the bacon fat brings. I usually keep some in my freezer, so will use that, too. Feel free to use coconut oil instead, though.
SAUSAGE INGREDIENTS
Makes ~18 patties
1-2 Tablespoons bacon fat or coconut oil
1 lb ground turkey
1/3 cup minced onion
2 cloves garlic, minced
1/2 teaspoon sea salt
1/2 teaspoon granulated onion
1/2 teaspoon oregano
1/2 teaspoon cumin
INSTRUCTIONS
Preheat oven to 375. Line a baking sheet with bleach-free parchment paper. Coat the parchment paper with bacon fat or coconut oil. Set aside.
Add all ingredients - turkey through cumin - into a large mixing bowl, and mix together using hands. Form small balls, then flatten into patties on the parchment paper.
Bake for 15 minutes, then flip. Return to oven and bake another 10 minutes.
