Barbecue Chicken Salad

This summer salad is so refreshing and easy to assemble.  It’s packed with a variety of plant fibers and a variety of protein sources!

INGREDIENTS

3 heads of romaine, chopped 

1 carton of cherry tomatoes, diced

1 lb of cooked and chopped chicken (you could use a rotisserie here if you’d like)

1/3 cup BBQ sauce 

1/2 cup of red onion, diced

1 can of black beans, rinsed 

2 medium avocados, cubed 

2 green onions, chopped

For the BBQ Ranch:

2/3 cup mayo

1/4 cup BBQ sauce (I prefer a low/no sugar added option) 

1 Tbsp apple cider vinegar 

1 tsp dried dill

1/2 tsp each of garlic powder, salt, and onion powder

INSTRUCTIONS

Chop the romaine and add it to a large bowl. 

Rinse the beans and chop the rest of the veggies, then add to the bowl with the romaine. 

Chop your chicken into bite-sized pieces and mix well with the BBQ sauce. Add to the salad. 

Combine all ingredients for the BBQ ranch in a small bowl and mix well. 

Top the salad with the dressing and garnish with the chopped green onions!
