Creamy Avocado Dip

This dip is the perfect addition to your Cinco de Mayo celebration. It’s creamy, delicious, and a crowd-pleaser, and no - it’s not guac! I love serving this alongside veggies for dipping, but it also makes the perfect addition to tacos.

The greek yogurt in this dip makes it higher in protein than your typical store-bought versions. If you’re unable to tolerate dairy, you can substitute a dairy-free yogurt!

The green onions and garlic in this recipe add a ton of flavor and also act as prebiotics to feed that beneficial bacteria in your gut.

Butternut Squash Salad

This salad is a favorite of mine during the fall and winter months because it’s so easy to throw together. I love bringing it to holiday potlucks as a nutrient-dense option to balance out the sweets and desserts.

If tolerated, you can top it off with crumbled goat cheese!

The addition of the chickpeas is a great way to add crunch and protein into this recipe.

Morning Glory Salad

I'm a sucker for salads, and I keep them interesting by using lots of different veggies, fruits and textures. For example, using a cheese grater to shred apples, carrots and beets is a real pro move of mine.

One afternoon I was shredding apples and carrots to put on top of a green salad for lunch and I realized that I had the start to a morning glory muffin (my all time fave muffin)...so since I had all the ingredients on hand, I just kept going with it.

This salad is so good it requires no dressing. And bonus points, my kiddo LOVES it.

Creamy Carrot & Sweet Potato Soup

This carrot & sweet potato soup checks all the boxes: it’s thick, creamy, and ready in less than 45 minutes.

The sweet potatoes are packed with Vitamin C, an antioxidant essential for immune system function. Keeping the skins on both the carrots and potatoes for adds fiber, and using bone broth is a great way to incorporate protein into this recipe.

Immune-Boosting Zucchini Noodle Ramen Soup

I originally made this immune-boosting soup when my family came down with the flu. My goal was to load up a soup with all the immune-supportive, anti-viral, gut-supportive* foods I could. The result was delicious, comforting and relatively easy to throw together—exactly what I was looking for while down and out. I’ve made it a few times since, and will continue to keep it on heavy rotation for the “cold and flu season”.

Late Summer Corn Salad

By far, my favorite way to eat corn is shaved right off the cob - raw. I’ve been making a version of this salad for well over a decade now (it’s a throwback to my raw food days), and realized it has never made it to the blog. So here we go!

Immune-Boosting (Lyme Prevention) Chocolate Shake

Herbalist and Lyme expert Stephen Buhner recommends using astragalus root to optimize immune function. He recommends taking 1,000mg every day, and up to 3000mg during Lyme season. I take encapsulated herb or tincture.

Since my daughter is only 5, I work astragalus powder into her foods. like this cold and creamy milkshake. For other ways I bolster my family’s immune system, check out all the resources mentioned in Episode 62 of The Funk’tional Nutrition Podcast.

Basic Bowl with Spicy Curry Peanut Sauce

Last week I had a client talk about food overwhelm. As in having so much information about what constitutes healthy food that it overwhelms her. Her ultimate goal is to eat perfectly paleo. But instead of taking baby steps toward that (maybe-too-lofty-for-her) goal, she throws her hands up and stays stuck.

It’s a classic case of letting perfect be the enemy of good, and most of us know it all too well. In our strive for perfection, we inevitably fall short of our ideals.

Creamy Seafood Chowder

I literally have no idea how I came up with this Creamy Seafood Chowder recipe, but it’s in my top 5 recipes I’ve ever created, no doubt. This chowder recipe uses a fair amount of grass-fed ghee. That, blended up with cauliflower is what creates the creaminess. Since ghee is made from butter, I didn’t label it as dairy free. But many of us who are dairy free can still consume casein and lactose-free ghee.

Festive Cranberry Vodka Mule

We hosted a Griswold family Christmas this year and I purchased roughly 764 pounds of food for the festivities but forgot ice. When I was fishing around the freezer for something to chill the vodka, I came up with several bags of organic frozen cranberries (I keep them on hand to throw in smoothies and baked apple dishes and such). Combined with other random dribs and drabs around the house, and we had the perfect festive house cocktail!
